Tortellini with Spinach and Tomato Sauce

TORTELLINI WITH SPINACH TOMATO SAUCE

1 package cheese tortellini (16 oz)
1 can dice tomatoes with garlic and onion (or some variation of those, 14.5 oz)
1 cup chopped fresh spinach
1/2 tsp salt
1/4 tsp peper
1 tsp minced garlic
2 T flour
3/4 cup milk
3/4 cup heavy cream
1/4 cup grated parmesan cheese

Cook tortellini according to package instructions.  Combine the tomatoes, spinach, salt, pepper and garlic in a saucepan over medium heat.  Cook until mixture begins to bubble, stirring occasionally.

In a bowl, whisk together the flour, milk, cream.  Stir this mixture into the tomato mixture in the saucepan along with the parmesan cheese and heat through.  Simmer until it thickens, about 2 minutes.

Pour drained tortellini into sauce and stir to coat.  Serve.
